    Collard Greens
  • 2 smoked ham hocks
    Fill pot with more than enough water to cover ham hocks.
    Boil water for about 35 minutes.
    The purpose is to extract the flavor from the ham hocks, and literally having the meat fall off the bones. Now add:
    Cajun seasoning…use your judgment
    1 red onion
    2 garlic cloves
    2 bunches of collards


    Racial Harmony Baked Beans
    1 can of black beans
    1 can of pork and beans
    1 can of white beans
    Pour into a baking pan. Now add:
    1 cup of brown sugar
    1 red onion
    A pinch of salt
    ½ cup of molasses
    Three strips of bacon
    Bake for 40 min at 375 degrees


    Green Beans
    2 smoked ham hocks
    1 red onion
    1 cup of sherry cooking wine
    Pinch of salt
    1 or 2 cans of mushrooms
    2 bags of frozen cut string beans
    Note: I prefer using red onions, however, a red or white onion will work just as well.


    Green Bean Casserole
    Ingredients:
    2 bags cut green beans
    1 bag or can of pearl onions
    1 cup of half and half milk
    1 teaspoon lemon pepper (or to your liking)
    1 can of Campbell's tm cream of mushroom soup
    Instructions:
    Mix green beans, milk, pepper, soup and 1 can of pearl onions.
    Bake at 375 degrees for 35 minutes stirring frequently.
    Add the remainder of onions and bake 5 minutes.
    Serve hot or cold.


    Stuffed Cabbage
    1 head cabbage
    Filling ingredients:
    1 lb ground turkey
    1 onion, grated
    1/2 cup uncooked long grain rice
    1/4 cup applesauce
    1 large egg
    salt and pepper, to taste
    Sauce ingredients
    3 cups tomato sauce
    1 onion, finely chopped
    2 tablespoons packed brown sugar
    2 tablespoons apple cider vinegar
    1 tablespoon lemon juice
    1/2 teaspoon ground mustard
    1/4 cup raisins
    salt and pepper, to taste


    Chitterlings
    Chitterlings require a lot of cleaning and love.
    Chitterlings require a lot of help when cooking to.
    Unseasoned chitterlings will be bland.
    I mean, don’t forget where they come from.
    5 to 10 pounds of chitterlings
    1 stick of butter
    1 whole chopped onion
    2 bay leaves
    Salt
    A touch of red flake pepper
    2 cups of red cooking wine


    Chitterling Chowder Soup
    Ever cook a big pot of chitterlings, and have some or a lot left over?
    Well, try my chitterling chowder soup.
    1 stick of butter
    1 nicely diced red onion
    diced celery
    diced carrots
    Let cook for a few minutes on low until you get a sautéed kind of look.
    Now add:
    ½ cup of flour, stir but don’t let it burn, keep it light
    ½ cup of half n’ half milk
    Diced garlic
    2 ½ cups of chopped chitterlings
    Pinch of salt and pepper
    Pinch of Cajun seasoning


    Ghetto Bacon Cheese Burger
    Ketchup
    Brown sugar
    Sautéed onions in butter
    Salt
    Pepper
    Bacon bits
    One cup well cooked chitterlings. Chop chitterlings up real fine in a blender
    Two pounds of ground beef
    Mix all ingredients well in a bowl


    Real Southern Fried Chicken
    You need a bowl
    1 whole cut chicken
    1 ½ cup of butter milk
    Season with salt and pepper
    Pinch of garlic salt
    Let soak in bowl for 1 hour
    In a bowl of flour, add a pinch of salt and pepper
    Now cover piece by piece of chicken in seasoned flour
    Carefully put chicken in hot frying pan. Fry until golden brown


    Friday Night Fried Chicken Cuisine
    1 whole cut chicken
    Marinate over night in a bowl filled with red wine
    Season with a pinch of salt, pepper, and paprika
    Melt one stick of butter
    1 cup of red wine
    A pinch of onion salt
    Mix with 6 eggs in a bowl
    Dip one piece at a time in the egg wash, then in a bowl of flour seasoned with salt and pepper
    Fry until golden brown

    Chicken Divan
    Boil 1 whole chicken…Boil until the meat is literally falling off the bones
    Don’t throw away the chicken broth / juices
    Cook fresh chopped broccoli in the same chicken broth….Cook / boil for about 15 minutes
    Boil 1 cup of elbow macaroni
    In a bowl, mix:
    Chicken
    Broccoli
    1 whole chopped onion
    Mayonnaise (Use your judgment)
    Already Cooked Macaroni
    Melt ½ stick of butter in ½ cup of half and half milk with 1 can of cream of mushroom soup
    Put in casserole pan
    Sprinkle lots of grated cheddar cheese on top
    Cook at 350 degrees for approximately 15 minutes
    Let it cool for approximately 15 minutes


    Chicken Salad
    Boil 1 whole chicken…Boil until the meat is literally falling off the bones
    While boiling, add
    1 finely chopped onion
    Salt
    Pepper
    Two cloves of garlic
    A splash of vinegar
    1 cup of red sherry cooking wine
    Boil 4 eggs
    After pulling the meat off the chicken bones, and putting it in a bowl
    Now…….
    Grate the 4 eggs
    Mix sweet pickled relish
    Mayonnaise
    A touch of mustard
    For flavor, I always add a little sandwich spread
    One whole chopped onion
    Paprika
    Serve with potato chips, ritz crackers, cheese, and of course make sandwiches


    Baked Creamy chicken breasts
    4 boneless, skinless chicken breasts
    10 oz. can condensed cream of chicken soup
    1/4 cup of half and half milk
    2 Tbsp. butter, melted
    1/2 cup shredded Mozzarella cheese
    Bake 45 minutes at 350 degrees
    (Breast of chicken in red wine sauce)
    3 slices Bacon
    6 pieces Chicken breast, skinless and boneless
    to taste Salt & pepper
    1 cup Flour
    2 tablespoons Olive oil
    1-1/2 cups Small pearl onions, peeled
    1 cup Dry red wine
    1/2 cup Chicken stock
    to taste Thyme, dry Fry bacon until crisp, drain on absorbent paper, break into pieces and reserve.
    Season breasts with salt and pepper. Dip in flour.
    Heat olive oil in the saute pan.
    Add breasts and brown well on both sides.
    Remove from the pan and keep warm.
    In the same pan add onions, wine, stock and thyme. Cook until the onion is soft and the sauce thickens.
    Adjust seasonings.
    Return the meat to the pan and continue cooking until done.
    At service, place some sauce on the plate under the breast.
    Garnish the onions and bacon.


    Soul Brother Baked Chicken
    Out of all the chicken recipes I’ve learned and used, this is by far the simplest one.
    Also, you can go talk to every home in the world,
    and I guarantee you will that every family will have their own unique way of preparing their version of baked chicken.
    1 Whole cut up chicken
    ½ stick of butter
    Salt (use your judgment)
    Pepper (use your judgment)
    Garlic clove
    1 Bay leaf
    Bake in oven for approx 1 hour at 400 degrees. Every once in a while, use a table spoon to base the chicken


    Salmon Croquettes
    This was my moms favorite dish she would make for the family for breakfast on Sunday mornings along with scramble eggs,
    harmony grits, and biscuits.
    In a bowl:
    2 large cans of salmon
    1 finely chopped red onion
    1 cup of ground up corn flakes (put in blender for a fine grind)
    1 egg
    1 table spoon of sour cream
    A pinch of salt
    A pinch of pepper
    Now shape into patties. Put into hot frying pan half filled with olive oil.
    Cook until both sides are golden brown.


    Soul Brother Baked Catfish
    Use a casserole type pan
    Catfish fillets
    1 ½ cup of water
    Pinch of pepper
    Pinch of salt
    ½ stick of butter
    ¼ cup of orange juice
    Sprinkle some paprika on top
    Bake at 350 degrees for 25 minutes
